Last May 5th, 2023, the Agro Food Technical Center in Tunisia organized a technical workshop on “The use of innovative dairy products from ultra filtrate of whey and consumer tests”.
This event was organized in the presence of various stakeholders, such as Ministry of Industry, Mines and Energy, Ministry of Higher Education and Scientific Research; Small and Medium Enterprises, support institutions, and Hamam Lif sports team as a target consumer.
The initiative was dedicated to the dissemination of whey recovery results and applied processing technologies (exchange and advised for the implementation of the new processes and dairy products) and it was an opportunity to share the taste of new whey-based products (evaluate the new dairy products developed, based on whey protein using consumer studies).
The technology developed was presented by EKONEK and DAINME-SME partners introduced the products prepared with whey liquid and powder. After that a world coffee was organized by CTAA for exchange, sensorial initiation and sensorial tests of new products with kiwi and dates.
Many discussions were conducted on the matter of valorisation of whey on food production and beverage and many recommendations were expressed by consumers to improve the quality of products proposed.
